### **Ingredients:**
- 500 g (1 lb) beef (flank steak, sirloin, or ribeye), thinly sliced against the grain
- 2 large onions, sliced
- 3 garlic cloves, minced
- 2 tbsp vegetable oil (or any neutral oil)
- 1 tbsp fresh ginger, grated (optional)
- 2-3 green onions, sliced (for garnish)
- 1 tsp sesame seeds (optional, for garnish)
#### **Marinade:**
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1/2 tsp black pepper
#### **Stir-Fry Sauce:**
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tsp sugar
- 1/4 cup water

### **Instructions:**
1. **Marinate the Beef:**
- In a bowl, combine soy sauce, cornstarch, oyster sauce, sesame oil, sugar, and black pepper.
- Add the thinly sliced beef to the marinade, mix well, and let it sit for at least 15 minutes (or up to 1 hour for more flavor).
2. **Prepare the Sauce:**
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, and water. Set aside.
3. **Cook the Beef:**
- Heat 1 tbsp of oil in a large skillet or wok over high heat.
- Sear the beef in batches to avoid overcrowding, cooking for 1-2 minutes on each side until browned. Remove from the skillet and set aside.
4. **Sauté the Onions:**
- Add another tbsp of oil to the skillet. Toss in the sliced onions and sauté for 2-3 minutes until slightly softened. Add the garlic (and ginger, if using) and stir-fry for another 30 seconds.
5. **Combine Everything:**
- Return the cooked beef to the skillet. Pour in the stir-fry sauce and toss everything together. Cook for 2-3 minutes until the beef is coated and the sauce thickens slightly.
6. **Serve:**
- Garnish with green onions and sesame seeds. Serve hot over steamed rice or noodles.
