Matki Kheer is a traditional South Asian dessert known for its creamy texture and rich flavor. Food Fusion has shared a delightful recipe that brings this classic treat to your kitchen. Here's how you can prepare it:
**Ingredients:**
- 1 liter milk
- 1 cup rice (soaked for 30 minutes)
- 1 cup sugar
- 4-5 green cardamom pods
- A handful of mixed nuts (almonds, pistachios, cashews), chopped
- A few strands of saffron (optional)
- 1 tablespoon rose water (optional)
**Instructions:**
1. **Prepare the Rice:**
- Drain the soaked rice and grind it coarsely. This helps in achieving a creamy consistency for the kheer.
2. **Boil the Milk:**
- In a heavy-bottomed pan, bring the milk to a boil.
- Add the green cardamom pods to the boiling milk for flavor.

- Reduce the heat to low and let it simmer. Stir occasionally to ensure the rice doesn't stick to the bottom.
4. **Sweeten the Kheer:**
- Once the rice is cooked and the mixture has thickened to your desired consistency, add sugar. Stir well until the sugar dissolves completely.
5. **Enhance the Flavor:**
- Add the chopped nuts and saffron strands to the kheer.
- If using, add rose water for an aromatic touch.
6. **Simmer:**
- Let the kheer simmer for another 5-10 minutes, allowing all the flavors to meld together.
7. **Serve:**
- Remove from heat and let it cool.
- Pour the kheer into small earthen pots (matkis) for an authentic presentation.
- Garnish with additional chopped nuts before serving.
