Rabadi Sev Katori Recipe by Food Fusion
Rabadi Sev Katori is a delightful fusion dessert that combines the creamy richness of rabadi (thickened sweetened milk) with the crispy texture of sev (fried vermicelli) shaped into edible bowls. This unique presentation not only enhances the visual appeal but also offers a harmonious blend of flavors and textures.
**Ingredients:**
*For the Sev Katori (Edible Bowls):*
- 1 cup sev (thin fried vermicelli)
- 1/2 cup sugar syrup (prepared by boiling equal parts sugar and water until slightly thickened)
*For the Rabadi:*
- 1 liter full-fat milk
- 1/2 cup condensed milk
- 1/4 cup sugar (adjust to taste)
- 1/2 teaspoon cardamom powder
- A few strands of saffron (optional)
- Chopped nuts (almonds, pistachios) for garnish
**Instructions:**
1. **Prepare the Sev Katori:**
- Take small bowls to use as molds and grease them lightly with oil.
- In a mixing bowl, combine the sev with the sugar syrup until the sev is well-coated and sticky.
- Place a portion of the sweetened sev onto each greased bowl, pressing gently to shape it into a katori (bowl) form.
- Allow the sev katoris to set until they hold their shape.
2. **Prepare the Rabadi:**
- In a heavy-bottomed pan, bring the milk to a boil.
- Reduce the heat to low and let the milk simmer, stirring occasionally to prevent it from sticking to the bottom.
- As a layer of cream forms on the surface, gently push it towards the sides of the pan.
- Continue this process until the milk reduces to about half its original volume.
- Add the condensed milk, sugar, cardamom powder, and saffron strands. Mix well and let it simmer for a few more minutes until it reaches a thick, creamy consistency.
- Remove from heat and allow the rabadi to cool to room temperature.
3. **Assemble the Dessert:**
- Once the sev katoris have set, carefully remove them from the molds.
- Fill each sev katori with the prepared rabadi.
- Garnish with chopped nuts.
4. **Serve:**
- Serve the Rabadi Sev Katoris immediately to maintain the crispiness of the sev bowls.
This dessert offers a delightful contrast between the creamy, rich rabadi and the crunchy sev katori, making it a perfect treat for special occasions or festive celebrations.
