#### 1. **Prepare the Almond Paste**
- Soak almonds in boiling water for 30 minutes.
- Drain and transfer them to chilled water; peel off the almond skins.
- Blend the peeled almonds with 1½ cups of water until smooth.
#### 2. **Cook the Mixture**
- In a non-stick pan, add the almond paste.
- Add sugar, milk powder, cardamom powder, and kewra essence. Mix well.
- Cook the mixture on medium heat, stirring continuously to avoid burning.
- Add ghee and continue to cook until the mixture thickens and starts leaving the sides of the pan, forming a dough-like consistency.
#### 3. **Shape the Katli**
- Grease a clean surface or use parchment paper. Transfer the cooked mixture onto it.
- Roll the mixture to your desired thickness using a greased rolling pin.
- Allow it to cool slightly before cutting it into diamond shapes.
#### 4. **Garnish and Serve**
- Garnish with sliced almonds and dried rose petals for a festive touch.
- Let it cool completely before storing in an airtight container.
