Nightshade Free Colcannon

This is a take off on a traditional Irish potato dish, colcannon. We use Japanese Sweet Potatoes as the Mrs. can not have nightshades. You could also use a root like yucca root, name root or cassava root. We have also used turnips and rutabaga. We hope you enjoy this nightshade version. Happy St Patty’s Day.

Ingredients:

4 Japanese Sweet Potatoes
6 Slices of Bacon
½ Head of Cabbage
Pinch of Salt
Pinch of Pepper
¼ Cup Yogurt
3 TBSP Myoko’s Vegan Butter
