- Water: 3-4 tablespoons
- Fresh coriander (chopped): Handful
*For the Ghee Slurry:*
- Cornflour: 3 tablespoons
- Baking powder: 1½ teaspoons
- Ghee (melted): 2½ tablespoons
*For the Kachori Dough:*
- All-purpose flour: 3 cups
- Himalayan pink salt: 1 teaspoon (adjust to taste)
- Ghee: 2½ tablespoons
- Water: ¾ cup (or as required)
- Cooking oil: For frying
**Instructions:**
1. **Prepare the Chicken Filling:**
- Heat cooking oil in a frying pan and sauté chopped onions until translucent.
- Add chicken mince and ginger garlic paste; cook until the chicken changes color.
- Incorporate green chili paste, salt, coriander seeds, turmeric powder, cumin powder, and crushed red chili. Mix well and cook for 2-3 minutes.
- Add all-purpose flour, mix thoroughly, and cook for an additional minute.
- Pour in water and add chopped fresh coriander. Mix well and cook on medium flame until the mixture dries up. Let it cool.
2. **Prepare the Ghee Slurry:**
- In a bowl, whisk together cornflour, baking powder, and melted ghee until well combined. Refrigerate until the mixture thickens.
3. **Prepare the Kachori Dough:**
- In a bowl, combine all-purpose flour, salt, and ghee. Mix until the mixture becomes crumbly.
- Gradually add water and knead until a dough forms. Cover with cling film and let it rest for 15-20 minutes.
- Divide the dough into equal-sized balls (approximately 50 grams each), cover, and let them rest for another 10 minutes.
4. **Assemble the Kachoris:**
- Take a dough ball, gently press, and roll it out with a rolling pin.
- Apply the prepared ghee slurry with a brush and fold all sides to form a square shape.
- Repeat the process for all dough balls, cover, and let them rest for 10 minutes.
- Take a prepared dough piece, press gently, and roll it out again.
- Place 2 tablespoons of the chicken filling in the center, apply water around the edges, gather all sides, pinch, and seal the ends properly.
- Gently press the stuffed dough ball to flatten it.
5. **Fry the Kachoris:**
- Heat cooking oil in a wok to 100°C.
- Fry the stuffed kachoris on very low flame until they turn golden and crispy.
