### **Ingredients:**
#### **For Chicken Marination:**
- 750g chicken (bone-in pieces)
- 1 cup plain yogurt
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp white pepper powder
- 1 tsp salt
- 1/2 tsp nutmeg powder
- 1/2 tsp mace powder (optional)
- 2-3 green chilies (slit)
- 1/4 cup fresh cream
- 2 tbsp cooking oil
#### **For Rice:**
- 2.5 cups basmati rice (soaked for 30 minutes)
- 4-5 cups water
- 1 tsp salt
- 2-3 green cardamom pods
- 1 small cinnamon stick
- 2-3 cloves
- 1 bay leaf
#### **For Layering and Garnish:**
- 1/2 cup fried onions (birista)
- 1/4 cup fresh cream
- 1/4 cup milk
- A pinch of saffron (soaked in 2 tbsp warm milk)
- 2-3 tbsp chopped mint leaves
- 2-3 tbsp chopped coriander leaves
- 2-3 tbsp ghee or butter
- 1/4 cup fried cashews and almonds (optional)

### **Instructions:**
#### **1. Marinate the Chicken:**
1. In a large bowl, mix yogurt, ginger paste, garlic paste, white pepper powder, salt, nutmeg powder, mace powder, and green chilies.
2. Add chicken pieces to the marinade and mix well. Let it marinate for at least **1-2 hours** (or overnight for best results).
3. After marination, add fresh cream and mix well. Set aside.
#### **2. Prepare the Rice:**
1. In a large pot, bring water to a boil. Add soaked and drained rice, salt, cardamom pods, cinnamon stick, cloves, and bay leaf.
2. Cook the rice until it’s **70% done** (the grains should still have a slight bite to them). Drain the rice and set aside.
#### **3. Cook the Chicken:**
1. Heat oil in a large pan or pot. Add the marinated chicken and cook on medium heat for **10-15 minutes**, stirring occasionally.
2. Cook until the chicken is tender and the marinade thickens into a creamy gravy. Remove from heat.
#### **4. Layering the Biryani:**
1. In a large pot or biryani handi, spread a layer of cooked chicken at the bottom.
2. Add a layer of partially cooked rice over the chicken.
3. Sprinkle fried onions, mint leaves, coriander leaves, and fried nuts (if using).
4. Drizzle fresh cream, milk, and saffron milk over the rice.
5. Add dollops of ghee or butter on top.
6. Repeat the layers if needed, finishing with a layer of rice and garnishes.
#### **5. Dum Cooking (Steaming):**
1. Cover the pot with a tight-fitting lid or seal with aluminum foil.
2. Cook on **low heat** for **15-20 minutes** to allow the flavors to meld together (this is called the dum process).
3. Turn off the heat and let it rest for **10 minutes** before opening the lid.
