Savory Cauliflower Steaks with Zesty Garlic Sauce
Simple and savory, this easy to make vegan cauliflower steak recipe goes perfect with this zesty lemon garlic sauce.
Ingredients
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of dried parsley
1/4 tsp of sea salt
1 small head of cauliflower
6 cloves of garlic
2 tbsp of sunflower oil (or oil of your choice)
1/2 cup of softened cashews
1 lemon
Directions
1. Preheat oven to 425F and line a baking sheet with parchment paper.
2. Add onion powder, garlic powder, parsley, and sea salt to a small dish. Mix well and set aside.
3. Rinse and trim cauliflower. Cut into approximately 1/2" size pieces and place onto baking sheet. Brush with oil and sprinkle with half of the seasoning.
4. Remove the skins from 6 cloves of garlic and add to a small baking dish, along with 2 tbsp of oil. Cover and place in the oven to roast for 30 minutes. Note: if you do not have a small baking dish, you can alternatively wrap the garlic tightly in tin foil and place on the same tray as cauliflower.
5. Bake cauliflower for 15 minutes. Remove from oven and carefully flip cauliflower. Brush the other side with oil and add the remainder of the seasoning. Bake for an additional 15 minutes. Remove both garlic and cauliflower from oven and let fully cool.
6. Once cooled, add roasted garlic to a blender along with softened cashews and juice of one lemon. Blend until smooth. Note: if you're blending is having trouble getting this smooth, you can add 1-2 tbsp of water.
7. When ready to serve, portion sauce between two dishes and place the cauliflower steak on top. Serve and enjoy!
