- 1 ½ cups **digestive biscuits** (or graham crackers), crushed
- ½ cup **butter** (melted)
- 2 tbsp **sugar**

- 200g **white chocolate** (chopped)
- 3 cups **cream cheese** (softened)
- 1 cup **heavy cream**
- ½ cup **sugar**
- 1 tsp **vanilla essence**
- 2 tbsp **gelatin** (dissolved in ¼ cup warm water)
#### **For the Topping (Optional):**
- Whipped cream
- Fresh berries (strawberries, raspberries, or blueberries)
- White chocolate shavings

### **Instructions:**
#### **Step 1: Prepare the Crust**
1. Preheat oven to **175°C (350°F)**.
2. In a bowl, combine **crushed digestive biscuits, melted butter, and sugar**.
3. Press the mixture into the bottom of a **springform pan**, creating an even layer.
4. Bake for **10 minutes**, then remove from the oven and let it cool.
#### **Step 2: Prepare the White Chocolate Filling**
1. Melt the **white chocolate** in a heatproof bowl over a double boiler or in the microwave (stirring every 20 seconds).
2. In a separate bowl, **beat the cream cheese** and **sugar** until smooth and creamy.
3. Add the **melted white chocolate** to the cream cheese mixture and mix until well combined.
4. Add **vanilla essence** and mix again.
5. Gently fold in the **heavy cream** until smooth.
6. Stir in the **dissolved gelatin** to set the cheesecake.
#### **Step 3: Assemble the Cheesecake**
1. Pour the **white chocolate cheesecake filling** over the cooled biscuit crust in the springform pan.
2. Smooth the top with a spatula and refrigerate for at least **6 hours**, or until fully set (overnight is best).
