### **Ingredients:**
- **Mangoes** – 2-3 ripe (peeled and chopped)
- **Sugar** – 1 ½ cups (adjust to taste)
- **Lemon juice** – 2 tbsp
- **Water** – ½ cup
- **Cardamom powder** – ½ tsp (optional)
- **Pectin powder** – 1 ½ tsp (optional, for thicker jam)

### **Instructions:**
#### **1. Prepare the Mangoes:**
1. Peel and chop the **mangoes** into small pieces.
2. Blend the mangoes into a smooth puree using a blender or food processor.
#### **2. Cook the Mango Puree:**
1. In a pan, add the **mango puree** and **water**. Bring it to a simmer on medium heat.
2. Once the puree starts to simmer, add **sugar** and stir continuously until the sugar is fully dissolved.
3. Cook the mixture for **20-25 minutes**, stirring occasionally, until it thickens and reaches a jam-like consistency. If you want a thicker jam, add **pectin powder** and cook for an additional 5 minutes.
4. Add **lemon juice** and **cardamom powder** (optional) for extra flavor. Stir well.
#### **3. Check the Consistency:**
1. To check if the jam is ready, drop a small amount on a chilled plate and run your finger through it. If it wrinkles and holds its shape, the jam is done. If not, cook for a few more minutes.
#### **4. Jar the Jam:**
1. Once the jam has thickened to your liking, remove it from heat.
2. Let it cool slightly, then transfer it into sterilized jars. Seal tightly.
#### **5. Cool & Store:**
1. Allow the jam to cool completely at room temperature.
2. Store the jam in the fridge for up to **2-3 weeks**.
