Keto Lemon Vanilla Mousse

I don't know about you, but I have a confession to make: I have a MAJOR sweet tooth! In order for me to be successful following a keto lifestyle, I need sweet options that are keto friendly. This recipe hits all the right flavor spots and helps me keep sated and happy!

Recipe:
1 cup heavy cream
1/4 cup allulose
1/2 cup masarpone (cream cheese works fine as a substitute for mascarpone)
zest and juice of two lemons
Splash of vanilla extract

Place everything into a bowl, then use an immersion blender to mix everything together and whip in air. Process until you get a fluffy texture (~ 1 - 2 minutes, depending on the immersion blender).

That's it!
