Cooking the BEST Steak EVER in Cast Iron - Cooking Is Easy
Cooking a steak in a cast iron pan is one of the best ways to get a perfectly seared, juicy, and flavorful result. Here’s how you can do it step by step:
### **Ingredients:**
- 1 high-quality steak (ribeye, sirloin, or filet mignon)
- 1 tbsp high smoke point oil (canola, avocado, or grapeseed)
- 2 tbsp butter
- 2 cloves garlic (smashed)
- Fresh rosemary or thyme
- Salt and freshly ground black pepper
### **Instructions:**
1. **Prepare the Steak**
- Take the steak out of the fridge **30-45 minutes** before cooking to let it come to room temperature.
- Pat it **completely dry** with paper towels.
- Season generously with **salt and black pepper** on both sides.
2. **Heat the Cast Iron Pan**
- Place your **cast iron skillet** on the stove and heat it over **high heat** for 3-5 minutes.
- Add **1 tbsp oil** and let it get shimmering hot (but not smoking).
3. **Sear the Steak**
- Carefully place the steak in the hot pan.
- Let it **sear undisturbed** for **2-3 minutes** until a golden-brown crust forms.
- Flip the steak and sear for another **2-3 minutes**.
4. **Baste with Butter**
- Reduce heat to **medium-low**.
- Add **butter, garlic, and rosemary (or thyme)** to the pan.
- Tilt the pan slightly and **spoon** the melted butter over the steak repeatedly for **1-2 minutes**.
5. **Check Doneness**
- Use a meat thermometer:
- **Rare:** 120-125°F (48-52°C)
- **Medium-Rare:** 130-135°F (54-57°C)
- **Medium:** 140-145°F (60-63°C)
- **Well-Done:** 160°F+ (71°C+)
6. **Rest the Steak**
- Remove the steak from the pan and let it **rest for 5-10 minutes** before slicing.
- This allows the juices to redistribute and keeps the steak juicy.
7. **Serve & Enjoy**
- Slice against the grain and serve with your favorite sides like mashed potatoes, grilled vegetables, or a fresh salad.
🔥 **Pro Tips:**
- Use **thick-cut steaks (at least 1 to 1.5 inches)** for the best sear and juiciness.
- If cooking a **very thick steak**, finish it in a preheated **oven at 375°F (190°C) for a few minutes** after searing.
- For extra flavor, sprinkle a pinch of flaky sea salt on top before serving.
