- 1 ripe peach
- 1/3 cup raw unsalted cashews
- 2 heaped tablespoons garam masala
- 2 large ripe tomatoes
- 6 fresh curry leaves
- Juice of one lime
- 1 cup chicken stock
- Salt and pepper to taste
- Basmati rice (for serving)
**Instructions:**
1. **Marinate the Chicken:** Season the chicken pieces with salt and pepper.
2. **Prepare the Masala Base:** In a blender or food processor, combine the onion, garlic, ginger, serrano chili, and cilantro stems. Blend until a smooth paste forms.
3. **Cook the Masala:** Heat 1 tablespoon of ghee in a large Dutch oven over medium-high heat. Add the masala paste and sauté for 8-10 minutes, stirring frequently, until the mixture becomes fragrant and slightly browned.
4. **Add Chicken:** Push the masala to the sides of the pot and add the remaining ghee. Place the chicken pieces in the pot, ensuring they are in contact with the bottom. Sear for 2-3 minutes on each side until lightly browned.
5. **Incorporate Remaining Ingredients:** Add the garam masala, chopped tomatoes, curry leaves, chopped peach, and cashews to the pot. Stir to combine all ingredients.
6. **Add Liquid:** Pour in the chicken stock and lime juice. Stir to ensure everything is well-mixed.
7. **Seal and Cook:** Cover the pot with a tight-fitting lid to trap the steam. Reduce the heat to low and let it cook for about 1.5 to 2 hours, allowing the flavors to meld and the chicken to become tender.
8. **Serve:** Once cooked, garnish with fresh cilantro leaves. Serve hot over basmati rice.
