This specific mimic always awards the Enchanted Falchion as well as souls. Since this is on NG+1, it's 6,000 souls. The Symbol of Avarice is a rare drop and can happen with any mimic. It is head armor that looks like the Mimic's head (i.e. the chest with the tongue sticking out). I've seen players use this.

According to the Fextralife article, it has a .1% drop rate (0.1%), but some players believe it's higher than that.
