-Enchilada Filling-
•2 Medium Chicken Breast •2 Chicken Thighs
•1 (8oz) Block of softened Cream Cheese
•½ Cup Chicken Broth •1 TBSP Butter
•1 medium onion •½ cup milk •1 (4oz) can chopped green chilis
•½ tsp ground cumin •½ tsp cayenne pepper •½ tsp salt
•1 cup Shredded Mozzarella Cheese •8-10 (8 inch) flour tortillas
•Salt and Pepper to taste

-Enchilada Sauce (as follows)- •1½ cups sour cream
•1½ cups heavy cream •1 (4oz) can chopped green chili's
•1 pinch cayenne pepper •1 pinch ground cumin

-Spanish Rice-
•2 TBSP Oil •2 cups chicken broth •2 TBSP onion
•1 cup chunky salsa •1½ cups uncooked rice
