Pahari Daal Recipe by Food Fusion
Pahari Daal is a distinctive and flavorful lentil dish that originates from the mountainous regions, offering a unique twist to traditional daal recipes. Food Fusion has crafted a version of this dish, combining various lentils with aromatic spices to create a rich and hearty meal.
**Ingredients:**
- 1/2 cup split Bengal gram (chana daal)
- 1/2 cup split black gram (urad daal)
- 1/2 cup red lentils (masoor daal)
- 1/2 cup yellow lentils (moong daal)
- 1 medium onion, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 2 tablespoons cooking oil or ghee
**Instructions:**
1. **Prepare the Lentils:** Rinse all the lentils thoroughly under running water. Soak them together in water for about 30 minutes to an hour.
2. **Cook the Lentils:** In a large pot, add the soaked lentils along with 4-5 cups of water, turmeric powder, and salt. Bring to a boil, then reduce the heat and let it simmer until the lentils become tender and mushy. This may take approximately 25-30 minutes.
3. **Prepare the Tempering (Tadka):** In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Then, add chopped onions and sauté until they turn golden brown.
4. **Add Aromatics:** Stir in the ginger-garlic paste and green chilies. Cook for another 2-3 minutes until the raw aroma disappears.
5. **Incorporate Tomatoes and Spices:** Add chopped tomatoes and red chili powder to the pan. Cook until the tomatoes soften and the oil starts to separate from the mixture.
6. **Combine with Lentils:** Pour this tempering over the cooked lentils. Mix well to combine all the flavors. Adjust the consistency by adding water if necessary, and let it simmer for an additional 5-10 minutes.
7. **Garnish and Serve:** Finish by garnishing with freshly chopped coriander leaves. Serve hot with steamed rice or your choice of bread.
