One Pot Chunky Garlic Mash Potatoes

Super quick, super easy. Delicious homemade. Low salt and healthy, Great aroma and texture. One pot chunky garlic, mashed potatoes. 20 minute recipe.
Potatoes are boiled, garlic,onion, sautéed, cooked and mashed in one pot!

Recipe breakdown:
quarter cut 6 to 7 medium, white or yellow potatoes.
Lightly salt water boil potatoes till soft.
drain potatoes but keep a large glass of water from potatoes(potato water)
While potatoes are boiling

Prep:
6-7 clove garlic fine chop
Fine chop less than 1/4 white onion

Seasoning:
Set aside, garlic powder, black or cracked black pepper, dried or fresh parsley, dried or fresh cilantro (or sub with chives).

After draining potatoes set aside in strainer, return the same pot to stove on Temp: high, let pot dry,
add to chunks or large tablespoons of butter, add garlic, onion, caramelized

Temp: Med add rest of seasonings, be generous with the garlic powder, sauté, pour in half a cup or more potato water sauté and stir,
Temp: Low, with a large spoon scoop in potatoes, use large spoon and fork to stir mash and turn - repeat till desired effect, consistency should be a mixture of chunky and mash style potatoes.
Add more butter or potato water for moisture and flavor.

Ready to eat or store for later, makes a great large side dish and you can use the rest for breakfast potatoes. enjoy!!
