Ingredients
- For Chicken Seekh Kabab:
- 800g boneless chicken cubes
- 1 large onion, grated and squeezed
- 2-3 green chilies
- 4-5 garlic cloves
- 1-inch piece of ginger
- 1 tsp red chili powder
- 1 tbs crushed coriander seeds
- 1 tbs roasted and crushed cumin seeds
- 1 tsp Himalayan pink salt
- 1 tsp garam masala powder
- Handful of fresh coriander and mint leaves
- 2 tbs ghee
- For Creamy Sauce Mixture:
- 1 cup yogurt
- 1 tbs crushed coriander seeds
- ½ tsp black pepper powder
- ½ tsp Himalayan pink salt
- 1 tsp garam masala powder
- ½ tbs roasted and crushed cumin seeds
- 1-inch piece of ginger
- 3-4 garlic cloves
- 2-3 green chilies
- 2 tbs lemon juice
- 150ml Olper's Cream (room temperature)
- ½ cup water or as required
- 1-2 tbs chopped fresh coriander
- 8-10 mint leaves
- For Tawa Kabab:
- 3-4 tbs cooking oil
- Chopped fresh coriander and green chilies for garnish
Instructions
1. Prepare Chicken Seekh Kabab: Chop the chicken, onion, green chilies, garlic, ginger, red chili powder, coriander seeds, cumin seeds, red chili crushed, pink salt, garam masala powder, fresh coriander, mint leaves, and ghee in a chopper. Refrigerate for 30 minutes.
2. Make Kababs: Grease your hands with oil, take a mixture (50g), and make kababs on wooden skewers.
3. Steam Cook Kababs: Steam cook the kababs for 8-10 minutes. Let them cool completely.
4. Prepare Creamy Sauce Mixture: Blend the yogurt, coriander seeds, black pepper powder, pink salt, garam masala powder, cumin seeds, ginger, garlic, green chilies, lemon juice, cream, water, fresh coriander, and mint leaves in a jug. Set aside.
5. Prepare Tawa Kabab: Fry the steamed cooked kababs in cooking oil until golden. Cut the kababs into 1-inch pieces and cook for a minute. Add the creamy sauce mixture, fresh coriander, and green chilies. Cook for 4-5 minutes. Add the remaining creamy sauce mixture and cook until the oil separates ¹.
