I’m obsessed with one pan dinners and this One Pan Mexican Chicken and Rice never disappoints! It has tender slices of chicken breast cooked in a flavorful Mexican rice. It’s the perfect family friendly dinner!

One Pan Mexican Chicken and Rice

Ingredients
1 1/2 lbs chicken breast, sliced into bite sized pieces
1 packet taco seasoning
1/2 onion, diced
4 garlic cloves, minced
1 1/2 cups basmati rice
2 1/2 cups chicken broth
8 oz can tomato sauce
For serving
Pico de gallo
Sour cream
Lime wedges

For the pico de gallo
4 Roma tomatoes
1/2 onion, diced
handful of chopped cilantro
Salt to taste

Directions
Season chicken with salt, pepper and half of the taco seasoning packet.
Heat oil in a pan over medium high heat and add chicken. Cook for 2 minutes.
Add onions and garlic and cook for another 2 minutes.
Stir in rice and cook for another minute.
Stir in chicken broth, tomato sauce, and the rest of the taco seasoning. Season with salt and pepper and bring to a boil. Turn the heat down to low cover and cook for 25 to 30 minutes or until rice is tender.
To serve, place chicken and rice into a bowl top with pico de gallo and sour cream and drizzle with lime juice.
