This is how we do our steaks at home. Start with a 24 hour dry cure and then slowly bake in the oven to 120 degress and then sear on either side for 1.5-2 minutes per side, this way you can have the perfect medium rare steak every time. Personally we really enjoy doing Fillet Mignon over Ribeye but whatever your preference.
