Mashed Potato Cakes | Blackstone Griddles
Got leftover mashed potatoes? Turn them into golden, crispy mashed potato cakes—just like The Hungry Hussey’s mama used to make. Packed with cheese, onions, and a touch of nostalgia, they’re the perfect way to make sure nothing goes to waste.

Ingredients
1lb or about 3 cups left over mashed potatoes
8oz of shredded Colby jack cheese
2 large eggs
2 green onions, chopped with greens and whites separated
1-2 teaspoons Blackstone Essentials Blend
2 tablespoon bacon grease or avocado oil (for frying)
Directions
1. Pre warm griddle to a low temperature.
2. Place leftover mashed potatoes in a mixing bowl.
3. Add to the bowl, cheese, Essential Blend, green onion bottoms, eggs, and flour. Mix until well incorporated.
4. Add to the griddle some bacon grease or your favorite cooking oil for the griddle. Spoon the mashed potato cakes to the griddle and form into circles.
5. Cook until golden brown on one side, about 3 mins each side.
6. Remove from the griddle once both sides are golden brown onto a paper towel.
7. Add to a plate or serving dish, add the greens from the green onions.
8. Serve with sour cream and/or ketchup. Enjoy!
