Sourdough Herb/Cheese Crackers & Mystery Babylon

In the video, I make homemade sourdough crackers with fresh rosemary, Parmigiana Reggiano & Pecorino Romano cheeses. This is a 1 day or 2 day process involving short-term fermentation and the use of a KitchenAid Pasta roller.

Ingredients for crackers:
1 cup sourdough starter
2 Tablespoons softened butter
3 Tablespoons Extra Virgin Olive Oil
1 teaspoon honey
1 cup whole wheat flour
¼-1/3 cup semolina flour
½ teaspoon non-iodized fine salt plus extra for dusting crackers
¼ teaspoon baking soda
1/8 teaspoon citric acid powder (optional)
2/3 cup Parmigiano Reggiano Cheese, finely shredded
½ teaspoon ground sage
1 teaspoon Italian Seasoning
2 Tablespoons finely chopped fresh rosemary
(or 2 teaspoons powdered rosemary)
