Chocolate Cinnamon Keto Muffins!

Thanks to some feedback from subscribers, today we're making a smaller quantity recipe for some keto muffins. This batch is chocolate cinnamon muffins. The result is a small (total of 4) set of muffins with a low net carb count (~ 4).

Recipe:
1 cup almond flour
2 tablespoons Greek yogurt
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon cinnamon
1 egg, slightly beaten
1 teaspoon vanilla extract

NOTE: This is a basic muffin recipe. You could omit the cinnamon and chocolate and add blueberries to make yummy blueberry muffins (or whatever other flavor you might like!).

Stir ins:
~ 1/2 cup cinnamon roasted pecans

~ 1/2 cup sugar free chocolate chips

Preheat oven to 350 degrees.
Prep muffin tin with liners.

Mix everything together. Drop batter into muffin tins until ~ 2/3 of the way full.

Tamp down the mix by tapping the pan on the counter a couple times to get the dough to settle.

Place pan in the oven and cook until a toothpick inserted comes out clean and the muffins are GBD-golden, brown, and delicious! Mine take 20 minutes.

Once they are cooled a bit, enjoy!
