Chicken Cordon Bleu

Ingredients
2 chicken breast
4 slices of ham
1 1/4-1 1/2 cups shredded mozzarella cheese
1/2 cup panko breadcrumbs
2 tablespoons butter, melted

For the sauce
1 tablespoon butter
1 tablespoon + 1 teaspoon flour
1 1/4 cups milk
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder

Directions
For the sauce
Melt 1 tablespoon butter over medium heat and stir in flour. In increments, whisk in milk until it’s well incorporated. Lower the heat to medium low and stir in Dijon mustard, garlic powder, onion powder, and season with salt and pepper. Let simmer until sauce has thickened.

Preheat oven to 350°.
Combine Panko breadcrumbs with melted butter.
Slice chicken breast in half lengthwise. Season both sides with salt and pepper. Heat oil in a pan over medium high heat and sear the chicken for 2 1/2 minutes. Flip chicken over, cook for another 2 minutes then remove from heat. If not using an oven save skillet transfer chicken to a baking dish.
Top each piece of chicken with a slice of ham. Pour over sauce, sprinkle over mozzarella cheese and top with Panko breadcrumbs. Bake for 20 minutes.
