Chicken, Roasted Garlic & Onion with a Citrusy Yogurt Sauce

Have y’all noticed how much Greek yogurt we use around here? My husband and son both have Factor V Leiden. Greek yogurt is a great substitute to many less healthy ingredients. We aren’t perfect, but we try!

For the chicken:
Chicken breasts
Olive oil or avocado oil
Harissa seasoning
Salt
Garlic powder
Turmeric
Paprika
Mix all in a bowl and set aside. I let this marinate for about 8 hours in the fridge but that much time isn’t necessary!

For the yogurt sauce:
About 1 cup plain Greek yogurt
Tablespoon lemon juice
Salt
Pepper
Tablespoon dried dill
Small handful of cilantro
2 tablespoons basil paste (I usually use fresh basil but our garden is currently out 👎🏻)
Throw all ingredients in a food processor and blend.

Slice a large onion and several cloves of garlic to keep the vampires away. I mean, layer them in the bottom of a cast iron pan drizzled with oil. Place your marinated chicken on top. Bake at 400° for about 30 minutes. The onion & garlic roasted in those chicken juices are so good! We serve over rice.
