Basil & Garlic Tahini Salad Dressing With A Grilled Chicken Salad

This salad is so good! You’ll need to marinate your chicken for at least 30 minutes but the longer the better!

For the chicken:
A heaping tablespoon of Greek yogurt
2 tablespoons lemon juice
Oregano
Salt
Pepper
Add all ingredients to a sealable bag and mix. Add 2 chicken breasts to the marinade bag. Refrigerate at least 30 minutes to let the marinade start working its magic on the chicken.

For the dressing:
About 4 tablespoons Tahini
2 tablespoons Basil paste (if you have fresh, use it!)
2 garlic cloves, diced
A dash of sesame oil
Tsp rice vinegar
2 tablespoons lemon juice
2 tablespoons avocado oil
Shake all ingredients up in a mason jar. If you have fresh basil, you can always throw everything in a small food processor and mix it up that way. Refrigerate until needed.

While your chicken is cooking on the grill, assemble your salad plates. We used a lettuce mix, shredded carrots, diced onion, sliced cucumber, olives, & banana peppers. For the croutons, we used fried onions. Yes, I know that’s two onions but trust me, it’s good. Once chicken is cooked through, slice and add to your salads. Top it off with that delicious herby and garlicky tahini dressing. 🤤
