Breakfast Gravy & Tots
Ingredients:
For the gravy
1/2 pound sage sausage, browned
1/2 small onion, diced
2 garlic cloves, minced
2 tablespoons flour
salt and pepper to taste
1/2 cup skim milk
2 cups low sodium chicken broth or stock
One bag frozen tater tots, baked nice and crispy
farm fresh eggs
Bake tater tots according to package directions.
In a medium pot, brown the sausage. About halfway through, add onion and garlic. Cook for a few minutes and slowly add in the flour. Be sure to mix the flour around. The flour will absorb the grease and be what thickens your gravy. Next, stir in 1/2 cup milk and 2 cups chicken broth. Add salt and pepper to taste. Let gravy come to a low simmer until desired thickness. Be sure to stir frequently. Meanwhile, you can be frying up some eggs to top this delicious bowl off with. That runny egg covering the gravy and tots is so good! When the tots and gravy are ready, you can assemble the bowls. We enjoy topping these off with green onion and Sriracha for an extra kick.
