This is by far one of my favorite things to make at home. We also had a somewhat traditional side salad to go with this meal. YUM!

Chicken Hibachi with Fried Rice
Ingredients:
2 chicken breast, cubed in about 1" pieces
1 tablespoon corn starch
1 tsp garlic powder
1 tsp salt
4 cups cooked, day old white or brown rice
1/2 onion, diced
6 garlic cloves, sliced
frozen peas and carrots
2 eggs
1 tablespoon chicken flavored powder
2 tablespoons avocado oil
1/4 low sodium soy sauce

Directions:

1. Add corn starch, garlic powder and salt to your cubed chicken. Coat well. This gives the chicken a slight crust, which in my opinion, makes it better than any chicken hibachi I've ever ordered.
2. Heat and oil your griddle.
3. Add chicken and day old rice to the griddle.
4. Creat a small hole in the middle of your rice and quick whisk the eggs into the rice. This helps create nonstick rice and will allow you to use less oil!
5. Add diced onion and sliced garlic. Cook 2-3 minutes.
6. Add soy sauce, chicken powder, and avocado oil to the rice. Mix it all in well.
7. Add frozen carrots and peas. Cook another 3-4 minutes.
8. Enjoy!
