A Week of International Flavors! Plus Mother’s Day Spa Day

Another gorgeous Texas Spring for Cinco de Mayo Weekend through Mother's Day! Dave tries fishing in the pond and then later we head to Addison Texas to visit our friend Peter who made us a traditional Greek dinner of Greek salad with Feta cheese and a Pastitsio, which is a layered baked pasta dish with Béchamel sauce and cheese. For Cinco de Mayo I make organic Turkey and three cheese enchiladas which had Cacique Oaxaca, cheddar and jack cheese. Then Friday before Mother's Day weekend, we enjoy a rich Italian dinner at Bella Italia, our neighborhood Italian restaurant. We start with an Old Fashioned for Dave and a Moscow mule style drink but with Tequila, yum! We share a Calamari appetizer, then Dave gets a creamy pesto pasta dinner and I get a chicken salad. On Mother's Day Saturday, we head north to the Winstar Spa and resort casino in Oklahoma. Along the way we drive through a quaint town called Gainesville with a very interesting small town feel. Then we head to the Winstar Spa for my spa day, a gift from my son who lives in New York. I had the most relaxing massage and enjoyed the steam, sauna, thermal pool and the relaxation lounge all day while Dave played poker. After my spa day, we get dinner at the hotel steakhouse, the Session House. I get my new favorite Moscow mule drink, again with Tequila and we order Shrimp cocktail, a special Mac and Cheese topped with fried onions, and a yummy crispy fried mushroom. It was a very special Mother's Day weekend for sure!
