GROUND BEEF AND VEGGIE STIR FRY

Ground Beef and Veggie Stir Fry is a quick, easy and tasty recipe, perfect for busy weeknights! It’s packed with lean ground beef and tender veggies in delicious savory sauce!

Ground Beef & Veggie Stir Fry

Ingredients
1 1b ground beef
1 red bell pepper, sliced
2 zucchini, sliced into half circles
1 small onion, sliced

For the sauce
1/4 cup soy sauce
1/4 cup ketchup
2 tablespoons honey
1 tablespoon rice vinegar
2 garlic cloves, minced

Directions
Mix all the ingredients for the sauce in a bowl and set aside.
Heat oil in a pan over medium high heat and brown ground beef, about 4 minutes.
Remove and set aside.
Add more oil and sauté bell peppers and onions for 2 minutes.
Add zucchini and cook for 1-1 1/2 minutes. Return beef back to the pan along with the sauce. Season with black pepper and cook for another minute. Serve over rice.
