Cauliflower Veggie Breakfast Rice – Fast, Healthy & Keto
Ingredients (Serves 1)
1/2 small cauliflower, cut into florets
2.5 tbsp olive oil
1 cup mushrooms, sliced
1 -2 garlic clove, chopped
1 onion, diced
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1 tsp coconut aminos
1 tbsp green onion, chopped
Salt and pepper, to taste
Method
Pulse cauliflower florets in a food processor until rice-like texture is achieved.
Heat olive oil in a non-stick pan over medium heat.
Add mushrooms and cook until browned.
Stir in garlic and sauté until fragrant.
Add diced onions and cook until soft.
Toss in red and green peppers; cook until vibrant.
Add cauliflower rice and stir to combine.
Drizzle with coconut aminos.
Garnish with chopped green onion.
Season with salt and pepper to taste. Serve warm!
Ready in under 30 minutes. Perfect for a nourishing keto breakfast.
