Good day and welcome back to the channel! Today, we're making something truly special. We're making Wampus inspired baked beans for my son's wedding!
NOTE: Wampus was a terrific cook and frequent contributor to the BBQ Brethren (https://www.bbq-brethren.com/). He was from Georgia and came up with an awesome baked bean recipe that includes peaches.

To start:
~ 1 lb of bacon, diced
~ 1.5 cups onion
1 large jalapeno, deseeded and fine diced
~ 7 cloves garlic, squished
1/2 lb pulled pork
1/2 lb smoked brisket
1 fattie (Jimmy Dean bulk sausage, dusted in BBQ rub then cooked in the smoker till done), diced
1 large can cling peaches in syrup
~ 1 tablespoon chili powder
~ 1/2 tablespoon ancho chili powder
~ 1/2 tablespoon chipotle powder
~ 1/2 tablespoon onion powder
~ 1 teaspoon Complete Seasoning (Badia)
~ 3 tablespoons BBQ sauce (I used Stubbs original)
~ 2 tablespoons yellow mustartd
~ 1-2 tablespoons of Worcestershire sauce
One 55 ounce can of baked beans

Saute bacon till it starts to get crisp
Add onion and saute until translucent
Add jalapeno and garlic and mix
Add everything else and mix

Cook for ~ 10 minutes, stirring constantly.
Then, place beans in the smoker. I was cooking ~ 325 degrees.
Cook for the next ~ 2 - 3 hours.

Enjoy!
