How to make a Delicious Italian Apple Cake

Enjoy this delicious Italian Apple Cake with a scoop of Vanilla Ice Cream or a cloud of whipped Cream.

Italian Apple Cake
Ingredients:
3-1/2 cups Gala Apples (3), peeled, cored, diced
2 tbsp Lemon Juice
2 Eggs, roomtemp
3/4 cup Sugar
1/2 cup Plain Greek Yogurt
1/2 cup Olive Oil (or Vegetable Oil)
2 cups Flour
2 tbsp Cornstarch
1/4 tsp Salt
1-1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 tbsp Lemon Zest
1-1/2 - 2 tbsp Sugar, Topping

Powdered Sugar

Combine Apples and Lemon juice, set aside.
Butter & flour (9 or 10") Ring Baking Pan.
Preheat Oven 350°F.
Cream together Eggs and Sugar
Add Yogurt and Oil.
Sift in Flour, Cornstarch, Baking Powder, Salt & Baking Soda, combine.
Fold in Apples and Lemon Zest.
Fill prepared Baking Pan.
Sprinkle with Sugar.
Bake 40-42 Minutes or until tester comes out clean.
Cool completely in Baking Pan before removing.
Dust with Powdered Sugar to your liking.
