FILIPINO ADOBO | My Dad’s Adobo Recipe

My Dad’s Filipino Adobo is in my opinion the best adobo!! It has tender pieces of pork simmered in the most tasty savory and tangy sauce. Serve it over rice and you are in for one of the most delicious meals!

Pork adobo

3 lbs boneless pork shoulder country style ribs, cut into 1 inch cubes
8 garlic cloves, smashed and rough chopped
1/2 cup soy sauce
1/2 cup vinegar
1 1/2 cup water
Black pepper

Directions
Heat a good about of oil in a pan over medium high heat. Add pork, black pepper, garlic, soy sauce, vinegar and water. Do not stir!
Bring to a boil, cover and let simmer between medium and medium low heat for 20 minutes.
After 20 minutes give everything a stir. Cover and cook keeping the heat between medium and medium low for another 40 minutes, or until tender, stirring occasionally.
Uncover and increase heat to medium high. Continue to cook until sauce has almost completely reduced and absorbed into the meat, about 6-7 minutes. Serve over rice.
