King Ranch Casserole and Charred Okra Pt 1

Hello!! Sorry it's so late! I am never doing two recipes in one video ever again!
RECIPES:
King Ranch Casserole:
Chicken:
1 (4 lbs) whole Chicken
1 white onion, peeled and cut in half
6 garlic cloves, peeled and smashed
1 jalapeno chile, stem removed, cut in half
1 bay leaf
1 teaspoon black peppercorns
1 teaspoon cumin seeds
1 tablespoon salt
Sauce (made in part 2):
1/2 cup (1 stick) unsalted butter
1 white onion, diced
4 garlic cloves, minced
1 red bell pepper, diced
1 celery stalk, finely diced
1 jalapeno chile, stem and seeds removed, minced
Salt and ground black pepper
1 (8-oz) package white mushrooms, finely diced
1/2 cup all-purpose flour
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano
1 teaspoon hot sauce
1 (10-oz) can tomatoes with chiles
1 cup heavy cream
Casserole (also covered in part 2):
12 corn tortillas
2 cups shredded cheese, such as mild cheddar or colby jack
Charred Okra and Onions with Lemon-Anchovy Vinaigrette:
Vinaigrette:
4 Anchovy fillets, minced
3 garlic cloves, minced
Juice of 1 lemon
1 teaspoon Dijon mustard
1/2 teaspoon honey
3/4 cup olive oil
1/2 teaspoon ground black pepper
Salt
Okra and Onions:
2 lbs okra, trimmed and cut in half lengthwise
2 TBSP olive oil, divided, plus more as needed
Salt and black pepper
8 to 10 cipolini onions, cut in half
Lemon-Anchovy Vinaigrette
1/4 cup chopped fresh flat-leaf parsley.
