Prepare about 1kg of egg plants by slicing and coating cut sides with sea salt. leave until juices begin to exit the cuts; at this stage about 15-20 minutes, wash off salt and set aside.

1/fry in sunflower oil or peanut oil, 2 cloves of garlic chopped finely.
2/ toss in 2 teaspoons of Sichuan pepper corns (prickly ash)
3/ fry until garlic is browning
4/Add all egg plants and possibly more oil and fry until soggy.
5/add a generous tablespoon of "old lady sauce" See branding in video.
6/ Do not burn the egg plant!

7/ add green prawns and cook until red, do not over cook the prawns!

8/ serve with boiled rice!
