Peanut Butter Bars with Freshly Milled Flour

Very Rich and almost candy like, these Peanut Butter Bars are perfect for a large gathering like a picnic or pot luck.

Preheat the oven to 350ºF

In a pot, over low heat add:
1 cup of butter (2 sticks)
1 1/2 cups of peanut butter (not natural)
1/2 cup brown sugar or sucanat
**cook, stirring frequently, until the ingredients are completely melted. Turn off the heat and add:
1 Tablespoon vanilla extract

**place off to the side and let it begin to cool.
In a large bowl mix:
1 1/2 cups cane sugar or white sugar
4 eggs (add one at a time and mix between each addition)
1 1/2 teaspoon salt
**Slowly add the warm peanut butter and butter mixture
**Add in:
2 cups of soft white wheat freshly milled flour or spelt (can also make with regular AP flour)
**Stir in flour until it is all incorporated. Do not over mix
Place thick batter in 13x9 pan greased and floured or parchment lined
Bake for 30-40 minutes at 350ºF
**Cool in the pan for 10 minutes then move to a cooling rack

Icing:
in a pot over low heat add:
1/2 cup butter
1/2 cup peanut butter
1/3 cup milk
**cook until all is melted. Turn off the heat and add 1 teaspoon vanilla extract and 4 cups of powdered sugar. Add more mill as needed 1 teaspoon at a time to make a pourable/thin icing. This will take quite a bit of stirring. But the effort is worth it.

Pour over the bars and let them cool completely. Cut into small pieces, about 30 or more pieces for the container.
