Scrumptious Thai Peanut Chicken Pasta Salad Recipe

This Thai Peanut Chicken Pasta Salad is great on warm days for Lunch or Dinner with slices of your favorite Bread.

Thai Peanut Chicken Pasta Salad
Ingredients:
3 cups Chicken, shredded
1 box (12 or 16 oz) Rotini Pasta, cooked
6 oz Creamy Peanut Butter
2-1/2 tbsp Soy Sauce
2 tbsp Maple Syrup
2 tbsp Rice Vinegar
1 tsp Sesame Oil
1-2 tsp Sriracha Sauce (or more)
1/2 tsp Ginger, grated
1-2 Garlic Cloves, minced
Zest of 1 Lime
2 tbsp Lime Juice
Hot Water
1 Red Bell Pepper, sliced
1 cup Peas, frozen/thawed
2 cups Carrot Matchsticks
1 Cucumber, cut in half lengthwise, seeds removed & cut in half moons
1 cup Red Onion, sliced
1 cup Green Onions, diced
3/4 cup Cilantro, chopped
1 cup Honey Roasted Peanuts, chopped

Combine Peanut Butter, Soy Sauce, Maple Syrup, Rice Vinegar, Sesame Oil, Sriracha Sauce, Ginger, Garlic, Lime Zest & Juice.
Whisk in slowly enough hot Water to thin out Dressing to your liking.
Set aside.
In large bowl combine Pasta, Carrots, Cucumber, Red Onion, Bell Pepper, Peas, Green Onion, Cilantro & Peanuts.
Add Chicken & Peanut Dressing, mix well.
