CHICKEN CHOWMEIN
2 chicken fillets cut into this strips
1/2 teaspoon crushed garlic
1/2 teaspoon cornflour
1/2 teaspoon fine black pepper
1 teaspoon chilli flakes
2 tablespoons sesame oil
1 small onion finely sliced
3 Spring onions roughly chopped
1/2 cup grated carrot
1/2 red pepper finely sliced
500g par boiled noodles
SAUCE
3 Tablesoons (45ml) soy sauce
1/4 cup Oyster sauce
2 Tablespoons sesame oil
1/2 teaspoon fine white pepper
1/2 teaspoon chilli flakes
METHOD
Coat chicken with dry spices and garlic and leave aside
Heat sesame oil and fry chicken until cooked through then remove and set aside
In the same pan, add veg and cook until softened
Mix sauce ingredients and leave aside
Add precooked noodles, chicken and sauce to the veg and toss everything together
Garnish with chopped coriander and chopped spring onion.
