The only things that can digest plants are microbes.

Cows, sheep, lamb, and goats are examples of ruminating animals that have multichambered stomachs full of rumen containing microbes that digest plants.
Therefore, it is the microbes that digest the plants, not the animal.

Humans have a small, monochambered stomach full of acid. It is a hostile environment for microbes. Remember, only microbes can digest plants. Humans have no microbes in their stomach. That makes plants indigestible.

Cow rumen is at the beginning of their digestive system where absorption takes place. In humans, it is way downstream at the end. That's too late. No absorption. No nutritional value.

Humans can digest meat, eggs, fish, and dairy.
