Sheet Pan Chicken Fajitas

It was my son's birthday and he wanted some guacamole for dinner. Fajitas with guac it was!

For the guacamole:
6 avocadoes
1 handful of cilantro
1/4 large red onion
1 medium tomato (I used tomatoes we had in the garden)
splash of lime juice
salt to taste
I like to throw all of this in a food processor and whip it up nice.

These sheet pan fajitas are ridiculously easy but so so delicious.
Ingredients:
4 chicken breasts, sliced
1 bell pepper, sliced
1 medium onion, sliced
Fajita seasoning blend
salt, to taste
Avocado oil

1. Preheat oven to 400°.
2. Add chicken, pepper and onion to your sheet pan.
3. Season with fajita seasoning, salt and drizzle with avocado oil. Mix well.
4. Bake until chicken is cooked through.
5. We topped these with guacamole and a chipotle yogurt drizzle.
6. Enjoy!
