Fresh Milled Flour NO Knead Bread

Today I am making a Fresh Milled Flour No knead bread that makes 4 one pound loaves. This recipe is from the cookbook: Healthy Bread in Five Minutes A Day

In a large container mix:
720 grams Fresh Milled Flour (I used hard red and hard white wheat)
270 grams Unbleached AP flour
15 grams yeast
15 grams salt
35 grams vital wheat gluten
**Mix to combine
900 grams room temperature water
**Stir to combine, place a lid loosely on the container and allow it to sit on the kitchen counter for 2 hours. After the 2 hours, place the container in the refrigerator for up to two weeks.
Over the next 14 days use the dough for various items such as boule, bread loaf, rolls, pizza and cinnamon rolls.

Remove desired amount of dough (I used 1/4 of the dough) and place the rest of the dough back in the refrigerator. Shape the dough as desired, let come to room temperature, covered, for 60-90 minutes. Then bake. Cool and enjoy.

Bake a boule in a dutch oven that has been in the oven that was pre-heated, 450ºF oven for 30-35 minutes with the lid of the dutch oven on for 25 minutes and then the lid off for 5-10 minutes.
