**Recipe has been updated from the video (instead of seasoning the chicken I added it to the sauce)**

Tuscan Chicken

Ingredients
1 1/2 lbs chicken breast
5 garlic cloves, minced
10 oz grape or cherry tomatoes, halved
1/2 cup chicken broth
1 cup heavy cream
1 teaspoon onion powder
1/2 teaspoon oregano
3/4 teaspoon paprika
3 cups baby spinach
1/2 cup grated Parmesan, plus extra for garnishing
Lemon juice

Directions
Slice chicken in half horizontally. Place parchment or paper or plastic wrap over the top and pound evenly. Season chicken well on both sides with salt and pepper.
Heat oil in a pan over medium high heat. Cook chicken until completely cooked through, about 3-4 minutes per side. Remove and set aside.
Add a little more oil sauté garlic for 30 seconds over medium heat.
Add tomatoes, season with salt and cook for 1 minute.
Add chicken broth and heavy cream and season well with salt and pepper. Bring to a boil let simmer over medium heat until sauce has slightly thickened, about 2-3 minutes.
Stir in spinach and cook until just wilted. Turn off heat and stir in Parmesan cheese.
Add chicken to the pan and sprinkle over lemon juice. Garnish with more Parmesan cheese if desired.
