FAT

Saturated fat is in animal foods and some fruits like coconut. They are stable and have no double bonds. They are further divided into chain length (long, medium, short).

Monounsaturated fat is found in olive oil, avocado, and macadamia nuts. They have one double bond.

Polyunsaturated fat is known as PUFAs. They have multiple double bonds and are very unstable since they can be oxidized readily. Seed oils are the problem children.

If you think you can avoid saturated fat because you were told it causes heart disease, think again. Your body can make it, and lots of it, via de novo lipogenesis. How? By eating excess glucose and fructose.
