Peeta's Life-Saving Nut-Free Loaf

Modified Recipe:
15g of Yeast
1 cup water
180g sourdough starter
480g bread flour
15g salt
up to 1/2 cup pumpkin seeds
up to 1/2 cup sunflower seeds
up to 1/2 cup chia seeds
1/2 cup raisins
Warm 2oz (about 60 grams) of the water to 110F. Mix in the yeast and set aside for 10 minutes.
In a mixing bowl fitted with a dough hook, combine the rest of the water, starter, and 10oz (about 283.5 grams) of the bread flour, Mix until the mixture comes together forming a soft dough.
Add the salt and the remaining flour. Knead the dough on medium high speed until the dough is smooth and elastic. Check the dough for gluten development with the window pane method. If the dough doesn't tare, it's ready for the next step. If not, knead for a few more minutes. If the 10 minuites for the yeast has passed, this is also where you add the yeast/water mixture.
Add the seeds to a food processor and process them until roughly chopped. Add to the dough mixture along with the raisins and knead in the stand mixer until the seeds and raisins are well incorporated. Then, flour a surface and continue kneading by hand to ensure the seeds and raisins are well distributed throughout the dough. Transfer to a lightly greased bowl and cover with plastic wrap. Place the dough in a warm area for one hour or until doubled in size.
Gently punch the dough down and transfer it to a floured traditional bread pan.
Let the bread proof for up to an hour, uncovered.
Preheat the oven to 500 F. Once the oven is preheated, let the bread bake for 15 minutes, check it, then let it bake for another 10 minutes.
To determine if the bread is cooked, it should have a nice golden crust and it should hollow when tapped on the bottom. Allow the loaf to cool completely before slicing.
To make it just like Peeta's loaf for Katniss, burn one end with a torch until you achieve the desired effect.
