It was fluke-tastic...

but....I should have filleted it. there are bones that go all the way down both sides of the fish and all the good stuff from butter to herbs to crispy breadcrumbs collects there, and you cant eat it, bc every bite is 20 pin bones.
but the fillet itself was f-ing spectacular...
