How to make Scrumptious Corn in a Cup (Esquites)

Corn in a Cup, also known as Esquites is a great Appetizer, Snack or Side Dish.

Corn in the Cup (Esquites)
Ingredients:
4 fresh Corn
1 red sweet Pepper, chopped
1 tbsp Cilantro, chopped
2-1/2 tsp Lime Juice
1/2 cup Cotija Cheese, crumbled
1-2 tsp Chili Powder (or more to taste)
4 tbsp Mayonnaise (more if you like it creamier)

Remove the Husk and place the Corn in a Pot, cover with cold Water & close the Lid.
Bring to a boil, cook until tender (approx. 5-8 min)
Remove Corn Kernels from Cobs.
Combine Corn with sweet Pepper, Cilantro and Cotija Cheese.
Add Lime Juice & Chili Powder.
Incorporate Mayonnaise, combine well.
Fill each Cup equally with Corn Mixture.
(makes approx. 4 to 6, depending on Cup Size)
Top each with Cotija Cheese and sprinkle with Chili Powder.
