What is Icebox Lemon Pie?
This refreshing pie hails from the American South and dates back to the 1930s, when electric iceboxes (early refrigerators) became more common in homes. Known for its creamy citrus filling, buttery graham cracker crust, and chilled set (no baking required for the filling!), it quickly became a staple dessert at family gatherings and church potlucks all across the U.S.

What’s in it & How Did We Make It?
We start by making a homemade graham cracker crust (with UK Digestive Biscuits as a substitute — because graham crackers are tricky to find here!). Then we whip up a silky, tart filling using:
🍋 Fresh lemon juice & zest
🥚 Egg yolks
🥫 Sweetened condensed milk

We bake the crust briefly, fill it with the lemony custard, and then let it chill in the fridge — just like the old-school “icebox” method. The final touch? A fluffy layer of whipped cream and a sprinkle of zest on top!
