Delicious Recipe for Peach Crumble Muffins

Peach Crumble Muffins are good for Breakfast/Brunch or for Dessert with a cup of Coffee or Tea.

Peach Crumble Muffins
Ingredients:
Crumble:
6 tbsp Butter, cold/cubed
2/3 cup Flour
3 tbsp Brown Sugar
1-1/2 tbsp Sugar
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Baking Powder
Pinch of Salt

Muffins:
1-3/4 cups Flour
1 tsp Cinnamon
1/4 tsp Nutmeg
1-1/2 tsp Baking Powder
1/2 tsp Salt
1/2 cup Butter, soft
1/2 cup Sugar
1/4 cup Brown Sugar
2 Eggs, roomtemp
1/3 cup Whole Milk, roomtemp
1-1/4 cups Peaches, diced

Combine Butter, Flour, Brown Sugar, Sugar, Cinnamon, Nutmeg, Baking Powder & Salt.
Work it until Crumble consistency, refrigerate.
Preheat Oven 425°F
Line Muffin Tin with Paper Cups.
Muffins:
Combine Flour, Cinnamon, Nutmeg, Baking Powder & Salt, whisk well, set aside.
Cream together Butter, Sugar and Brown Sugar.
Add Eggs one at a time and Milk.
Scrape down sides of bowl.
Incorporate Flour Mixture in batches.
Fold in Peaches.
Fill each Paper Cup with Batter.
Top each with Crumble.
Bake 5 Minutes, lower heat to 375°F.
Continue baking 20 Minutes or until tester comes out clean.
Rest in Tin for 4 Minutes.
Cool completely on Wire Rack.
