Is Their Risk Assessment too narrow or Am I dumb?

GrapheneOS is a really cool mobile OS, and it does it very well. What I don't get is how they get their risk assessment for different pieces of hardware and how it applies to use cases. I take a small stab at rambling over this and point out issues I personally see.
